We’ve always loved mashed potatoes! A dish that with the addition of CoccoMio coconut oil becomes even more delicate and delicious.
- 2 kg potatoes - do not peel
- 1/4 cup CoccoMio Coconut Oil
- 2 tbsp butter - or clarified butter
- 1 cup coconut milk - at room temperature
- Salt and pepper to taste
- Steam the potatoes until they are soft, about 15-20 mins.
- Mash them with a potato masher and mix with the oil and butter until the mixture is creamy and homogeneous.
- Add coconut milk, salt and pepper and keep turning until everything is well mixed.
