Christmas is knocking at the door so we are gifting you this delicious recipe for a dehydrated fruitcake. Eat it and offer it to your loved ones during the festivities and you’ll all be very merry indeed!
Dehydrated Fruit Cake
Ingredients
- 200 g prunes
- 100 g dates
- 100 g fresh - or frozen blueberries
- 200 g dried figs
- 150 g dried apricots or candied orange or candied cherries
- 100 g apple puree
- 1/2 cup apples - or orange juice without added sugar?and… if there are no kids around, a dash ( or two… or three ) of rum or brandy
- 2 tbsp CoccoMio Coconut Oil
- 70 g white spelt flour - or normal flour
- 30 g buckwheat flour
- 3 medium organic eggs
- pinch alt
- pinch cinnamon powder - cloves powder and ginger (or cardamom) powder
- the grated peel of an orange or a lemon
- 1 sachet yeast for desserts
- 2 tbsp sliced almonds to decorate
Instructions
- Put the dehydrated fruit to soak for one hour in lukewarm water (leave the blueberries out).
- Drain well, cut into coarse pieces and put it in a saucepan along with the apple puree, the apple (or orange) juice plus the dash of brandy (or rum) if you want to add a little chick.
- Bring to boil, cook for a minute.
- Take away from the heat and add the coconut oil and the blueberries.
- Let it cool.
- Sift the two flours and mix in the yeast. Add the beaten eggs, the spices, the pinch of salt and the citrus rind.
- Add the cream of dried fruit and blueberries.
- Mix well and pour the cake into a cake tin 22/24 cm in diameter.
- Decorate the top with sliced almonds and place in the oven at 170 ° for an hour and a half.
