Chicken on a Boat
Ingredients
- 2 tbsp CoccoMio Coconut Oil
- 1 inch piece fresh ginger - diced
- 3 diced garlic cloves
- 3 chicken breasts - cut into cubes
- 1/2 tsp chopped red pepper
- 1 organic green pepper in cubes
- 200 grams diced champignon buttons
- 4 sliced organic onions
- 2 tbsp gluten-free tamari
- Salt and pepper to taste
- 1 head of lettuce - leaves detached, rinsed and dried
Instructions
- Heat the coconut oil in a pan and add the ginger and garlic. Cook for a few minutes.
- Add chopped chicken and red pepper and cook 5-7 minutes or until cooked. Add green pepper and mushrooms and let it cook a few more minutes. Add the spring onions with the tamari.
- If you like more cooked vegetables, add them before the chicken. Season with salt and pepper.
- Serve the chicken laid on 3 or 4 lettuce leaves.
