Chicken Fried Rice
Ingredients
- 2 pounds chicken breasts
- 1 cup CoccoMio Coconut Oil
- 1 large onion cut into cubes
- Himalayan salt - to taste
- 3 cups Basmati type rice
- 2-16 garlic cloves - pressed
- 8 organic eggs
- 1-2 tbsp organic fermented soy sauce
- 2 tsp toasted sesame oil
- Freshly grated ginger - to taste
- 1 Kg frozen mixed vegetables of your choice
- Black pepper - to taste
- Chopped green onions - optional
- Black or white sesame seeds - to taste (optional)
Instructions
- Cut the chicken into small cubes (1 to 2 cm).
- In a wok add the coconut oil, onions and chicken and add salt. Cook over medium-high heat until the chicken is well cooked. Add the garlic and ginger while the chicken is cooking.
- Add frozen vegetables. Cook over medium-high heat until the vegetables are cooked, about 10 minutes, cover the wok. While the vegetables are cooking, break all the eggs in a bowl.
- Divide the vegetables and the chicken on one side of the wok and pour the eggs on the other side of the wok. Cook the eggs and add salt and pepper. After about 5-10 minutes, incorporate the eggs to the rest of the ingredients.
- Separately cook the rice and add it together with the soy sauce and sesame oil. Stir to combine completely.
