Aren’t you tired of giving your children snacks that are full of hydrogenated fats, preservatives and artificial flavours? Surprise them by making this lovely coconut and red berry doughnut recipe. ? ?
These delicious doughnuts are also lactose-free thanks to the use of coconut milk. ? The coconut milk and oil give the dough a pleasantly exotic taste, perfectly balanced by the sour note of the raspberries and the blueberries.
Fluffy Coconut and Red Berry Doughnuts
Ingredients
- 250 g flour
- 125 g sugar
- 11 dl coconut milk
- 2 eggs
- 10 dl CoccoMio Coconut Oil
- 15 g Blueberries - fresh or frozen
- 15 g Raspberries - fresh or frozen
- 1 tsp Yeast powder for cakes
- 1/2 tsp salt
- q.b. Icing sugar - optional
Instructions
- To prepare the coconut and red fruit doughnuts, first put the coconut oil in a saucepan and melt it over a low flame just long enough to make it liquid.
- Meanwhile, sift the flour and baking powder in a separate bowl.
- Now pour the sugar into the bowl of a planetary with a leaf hook, add the eggs and work at low speed until you get a light and fluffy mixture. Turn off the planetary, add the coconut oil, work again and, after a couple of minutes, add the coconut milk.
- When the mixture has become homogeneous, switch the machine off again, pour the previously sifted flour with baking powder and continue working until the powders are well mixed. Finally add the salt, raspberries and blueberries and stir again.
- After incorporating the red berries into the mixture, transfer it to a pastry bag.
- Grease and flour 5 doughnut-shaped moulds with a diameter of 12 cm and 4 cm in height.
- Fill the moulds with the dough for half their height, then bake in preheated oven at 180 ° for about 25 minutes, placing them on the middle shelf.
- Once cooked, take the doughnuts out and let them cool, then remove them from the mould.
- Serve your delicious coconut and red fruit doughnuts sprinkled with powdered sugar (if you like) et voilà … your children will have a delicious and genuine snack to grow healthy!
