When it comes to Coconut Oil, there is Refined Coconut Oil and Unrefined Coconut Oil.
Refined Coconut Oil is made with the use of solvents. Either in the extraction or the purification process.
As solvents are used to extract the coconut oil, the coconut meat used is generally of very poor quality.
Unrefined Coconut Oil is made by mechanically extracting the coconut oil with the use of a Press, Mill or Expeller.
What makes a the best coconut oil is determined by what goes into the press and I’m not talking about the quality of the coconut, which goes without saying. The difference is whether you do a dry-press or wet-press.
Dry-Press Coconut Oil
Most of the unrefined coconut oil on the market is made by pressing dry coconut meat and it is sold under many different names; Virgin, Extra Virgin, Cold-Pressed, First Press and even Raw.
Whether the coconut meat was dried in an oven at 80Ëšc or left out in the field to dry in the sun, this drying process can damage the nutrients and create a strong sweet “Coconutty” taste and smell.
Wet-Press Coconut Oil
Wet-Pressed, also known as Wet-Milled Coconut Oil is made by pressing fresh wet coconut meat straight from the tree.
When you press fresh wet coconut meat straight from the shell, you get a milk and oil mixture.
If you get Coconut Oil straight from the press, the coconut meat must be dry or you’ll get milk.
To separate the milk from the oil you can use the Fermentation Method or Fresh Centrifuged Technology.
Fermentation Method involves adding enzymes to the milk and oil mixture. When the milk ferments, it will separate from the oil and the coconut oil is then collected.
Fresh Centrifuged Technology, which is the method that we prefer, the milk and oil mixture is spun in a centrifuge to separate the milk from the Coconut Oil.
